The inspiration to make these got here after a very embarrassing incident. I hate site visitors and Sydney site visitors is notoriously unhealthy, particularly while you dwell in an space the place it’s one lane roads out and in. I dwell fairly removed from the town so when I’ve morning conferences, I wish to make them early so I can beat the site visitors.

They’re often conferences over breakfast however I’m a type of those that must eat asap upon waking, in any other case I really feel sick. So I used to be up earlier than 5am, took my canine out for a fast run then within the automobile with a thermos of espresso and toast to munch whereas driving by 6am.

Within the metropolis earlier than 7, I hopped out of my automobile and strode in the direction of the cafe I used to be assembly my pal at.

As I approached, he began sniggering and stated “I assumed we had been assembly over breakfast?”

“Effectively sure….aren’t we at a restaurant?”, I quipped in response.

“So that you’re having a second breakfast?” he requested, nonetheless grinning.

I wish to suppose I’m fairly good at sensible ass responses, however at this, I fumbled, not eager to admit I’d already had breakfast.

Then he pointed at my shirt.

I appeared down, and noticed my BLACK high was coated in toast crumbs. I imply COVERED. Girls will perceive after I say there are specific materials that crumbs CLING to, and I used to be carrying one in all THOSE tops…..

I nonetheless frequently eat breakfast within the automobile. However I created this crumb free breakfast so I’ll look presentable after I arrive at my vacation spot. 🙂

These are an awesome breakfast on the run. The filling holds collectively effectively so that you gained’t get bits falling out as you eat it. And they’re made with comfortable taco shells (mini tortillas), in order that they don’t crumble while you chew into them. I additionally want making these with small tortillas quite than full dimension ones as a result of they’re “handheld” dimension. However in fact, you can also make them with common tortillas too. 🙂

They’re freezable and will be reheated within the microwave, although the oven is healthier as a result of then the tortilla crisps up (however nonetheless doesn’t crumble a lot). And you’ll change up the filling to your style. Bacon is nice, as is chorizo (cook dinner them the identical method as per the recipe), salmon (smoked or canned), corn, beans or some other diced greens (so long as they’re sautéed in order that they aren’t watery).

The scrambled eggs on this are not a pure yellow color of ordinary scrambled eggs as a result of I like to make use of the flavour of the sausages (or bacon!) to fry the eggs. Flavour over look!

So that is one for all those that eat breakfast on the run like I do. Meals you may eat with out ending up with crumbs throughout you!

Ingredients

  • 1/2 tbsp olive oil
  • 10 oz / 300g spicy Italian Sausages (Note 1)
  • 1 tbsp butter
  • 1 small onion , diced (brown, yellow, white, spanish)
  • 3 birds eye chillis , sliced (adjust amount to taste Note 2)
  • 2 cloves garlic
  • 6 eggs
  • 1 tbsp milk
  • 3/4 tsp salt
  • Black pepper
  • 3/4 cup grated cheese (I used cheddar, any other flavoured cheese that melts works fine)
  • 1/4 cup fresh basil leaves , thinly sliced (or sub with 1 tbsp dried Italian herbs basil, parsley, oregano)
  • 8 small tortillas , corn or flour (around 6" / 12 cm rounds)
  • Olive oil , for brushing

Instructions

  1. Preheat oven to 180C/350F. Spray a baking tray with oil, or line with parchment/baking paper.
  2. Remove sausages from casings.
  3. Heat oil in a large fry pan over high heat. Add the sausage and cook, breaking up into chunky pieces, until nicely browned. Remove from pan.
  4. Turn stove down to medium high and melt butter in the same pan (don't clean the pan). Add the onion, chills and garlic and sauté for 3 to 5 minutes until the onion is translucent and a light golden brown.
  5. Add the eggs, milk, salt and pepper. Stir slowly, not vigorously, using a wooden spoon until the eggs are "holding together" but are still wet - about 5 minutes.
  6. Remove pan from the stove, stir through the sausage, cheese and basil leaves.
  7. Divide filling between the tortillas.
  8. Roll up the tortillas and place on the baking tray, seam side down. Brush with olive oil (optional), then bake for 15 to 20 minutes until light golden and slightly crisp.
  9. Serve while warm.
  10. To freeze, allow to cool then place in the freezer. To reheat, defrost then reheat in the oven (to make it crisp again) or in the microwave (the tortilla will reheat soft so it will be more like a burrito).

Notes

1. The tastiness of this depends on the sausages you get. Real Italian sausages are "chunky" in texture, you can see white bits of fat and they have great flavour which is used as the "seasoning" in this. Better value sausages have fillings to bulk it out so you won't get the same result. If you use the cheaper sausages, I suggest upping the flavours by adding some extra flavours like chilli, paprika and Italian seasoning.
2. The spiciness of the chilli reduces if you freeze it so if you like spicy, add more chillies.
3. Nutrition per roll up. You can reduce the calories by using lean Italian Sausages - see below.
