Ingredients
1 (1 pound) lean boneless pork loin roast, cut into chunks
2 medium sweet potatoes, peeled and cubed
1 (14.5 ounce) can fire-roasted diced tomatoes
1 medium red onion, chopped
1 cup diced green chiles
½ cup chicken broth
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon lime juice
Directions
Place pork, sweet potatoes, tomatoes, onion, green chiles, chicken broth, cumin, salt, and black pepper into the bottom of a slow cooker; cover slow cooker.
Cook on Low for 6 to 7 hours. An instant-read thermometer inserted into centers of pork chunks should read at least 145 degrees F (63 degrees C). Stir in lime juice before serving.
