Ingredients

Original recipe (1X) yields 6 servings

  • 1 ¼ pounds lean ground beef

  • 46 ounces tomato-vegetable juice cocktail

  • 1 (29 ounce) can diced tomatoes

  • 1 (15.25 ounce) can whole kernel corn

  • 1 (15 ounce) can kidney beans, drained and rinsed

  • 1 (15 ounce) can black beans, rinsed and drained

  • 2 (1 ounce) packages taco seasoning mix

Directions

  1. Heat a large stockpot over medium-high heat. Cook and stir ground beef in the hot pot until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

  2. Add tomato-vegetable juice, tomatoes, corn, kidney beans, black beans, and taco seasoning to beef in the pot. Bring to a boil. Reduce heat to medium and cook until heated through.
