The Sydney Good Meals & Wine Present happened on the weekend simply gone and I used to be so excited to be there doing cooking demos for Murray Valley Pork!! I deliberate for it meticulously, practiced the recipes again and again, slapped on the make-up and packed a complete suitcase stuffed with kitchen gear to take (no joke). And I had all my Child Fingers tightly crossed that it might go precisely to plan.
It didn’t.
I forgot to make use of many of the garnishes and sides for every thing I made, eager to make every thing look fairly.

This unfold is my copycat of the Carnitas tacos at Outdated City Mexican Cafe in San Diego that my buddy Kevin from Kevin Is Cooking took me to after I visited a few months in the past. With San Diego being solely half-hour from the border of Mexico, there’s significantly good (and actual) Mexican meals there, and the Carnitas at Outdated City Mexican Cafe are reputed to be one of the best on the town!
I don’t wish to come off as obnoxious, however I did declare to Kevin that I really assume my Gradual Cooker Pork Carnitas are fairly darn near the Outdated City Mexican Cafe ones. 🙂

So I made my Pork Carnitas taco unfold full with refried beans (made by dressing up canned refried beans), a chipotle tomato salsa sauce similar to Outdated City Mexican Cafe. Listed below are some iPhoto snaps from after I went. What do you assume? Does mine look comparable? 😉

Creamy avocado and refried beans. Juiciness from tomato, zing from onion, and a recent kick from the spicy tomato salsa sauce, completed with a squeeze of lime.
No bitter cream and no cheese right here! That’s not the best way tacos are served in Mexico! However I’d by no means decide should you needed to have them….

Ingredients
- Pork Carnitas
- Spicy Tomato Salsa Sauce
- Small tortillas (corn or flour)
- Avocado slices
- Tomato slices
- Lime wedges
- White onions , finely sliced or diced
- Coriander / cilantro leaves
- Grated cheese
- 1/4 cup finely chopped onion (white, brown or yellow)
- 1 garlic clove , minced
- 2 tbsp olive oil
- 14 oz / 435 g can refried beans (I use Old El Paso)
- 1 tsp onion powder (or garlic powder)
- 1/2 tsp cumin
- 1/3 – 1/2 cup sour cream
Instructions
- Heat oil in a saucepan over medium high heat. Add garlic and onion, saute for 3 minutes.
- Add remaining ingredients except sour cream and stir to combine. Add about 1/4 cup sour cream, stir, then add more to achieve your desired consistency. Once the beans are heated, remove from heat.
- Warm tortillas, according to packet instructions.
- Pile up Pork Carnitas on a plate.
- Spoon Refried Beans onto a plate and top with grated cheese.
- Place coriander, lime, onion, tomato and avocado onto a plate.
- Serve with Spicy Tomato Salsa on the side as the sauce!
Notes
1. I like to make this with homemade chicken broth/stock instead of sour cream if I have it on hand. It has to be unsalted stock otherwise it will be too salty because store bought refried beans is already quite salty, which is why I use sour cream instead of store bought broth to loosen the thick gloop that comes out of the can to make it like what you get at restaurants.
