Original recipe (1X) yields 12 servings

  • 1 pound ground beef

  • 1 cup cornmeal

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 (14.5 ounce) can cream-style corn

  • 1 cup milk

  • 1 cup shredded Cheddar cheese

  • 1 onion, chopped

  • 2 jalapeño peppers, chopped

  • 1 egg

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Coat a 9X12-inch baking dish with cooking spray.

  2. Heat a large skillet over medium heat. Add ground beef; cook and stir until no longer pink. Set aside.

  3. Whisk cornmeal, salt, and baking soda together in a large bowl. Stir in corn, milk, Cheddar cheese, onion, jalapeños, and egg. Stir in browned beef; pour into the prepared baking dish.

  4. Bake in the preheated oven until golden brown, about 1 hour.
