Migas breakfast tacos feature a creative deconstructed version of traditional migas, where eggs are normally cooked with fried tortilla strips for classic breakfast satisfaction. This innovative interpretation maintains essential migas flavors while adapting the preparation method for improved texture and presentation. The deconstructed approach allows better control over ingredients while ensuring every bite delivers the authentic taste that makes migas a beloved breakfast tradition.

Migas are normally cooked eggs with fried tortilla strips. I however enjoy a ‘deconstructed’ version. I cook my eggs with Hatch chiles and onions, stuff a tortilla with the egg mixture, and top them with fried corn tortilla strips.
