  • Cucumbers – That is finest made utilizing the lengthy English / telegraph cucumbers. These are much less watery and have barely firmer flesh than the shorter Lebanese cucumbers that are extra frequent in Australia. They maintain up higher as soon as dressed.

    In the event you can’t discover English / telegraph cucumbers, use 4 Lebanese cucumbers as an alternative (no have to peel these, the pores and skin is softer);

  • Bitter cream – Full-fat is finest, as a result of the cucumber juices will dilute the creamy dressing. Nevertheless low-fat works simply positive too. You may also substitute thick plain yogurt;

  • Vinegar – Simply plain-old white distilled vinegar; and

  • Dill – The contemporary aniseed-y flavour actually makes it! So don’t skip it! Alternate options: Chives will add a pleasant refreshing oniony contact, mint can even go very properly, else parsley for a extra impartial flavour. Coriander / cilantro will give it an important Center Japanese spin (I’d most likely add a squeeze of lemon and contact of garlic too).

  1. Peel and finely slice cucumbers – It’s finest to peel English / telegraph cucumbers as a result of the pores and skin is a bit thick and difficult. It simply provides the salad a greater total texture, in any other case you might have the marginally harder pores and skin mingling with the tender flesh. It additionally appears to be like beautiful with the pale inexperienced of the flesh solely!

    In the event you’re utilizing Lebanese cucumbers, there isn’t any have to peel them as a result of the pores and skin is softer (be at liberty to, nonetheless).

    Finely slicing – A mandoline will make brief work of this. That is the one I’ve – I’ve been loyal to it for my complete cooking life, I like it. In any other case, showcase your knife abilities!

  2. Combine dressing – Combine dressing substances in a small bowl, then toss cucumbers within the dressing. The dressing is initially fairly thick, as proven under, however it can skinny out within the subsequent step; and

  3. Go away for 4 hours+ – Set salad apart to let the cucumbers sweat and soften with the salt and acid from the dressing, like a really gentle pickling. The cucumber juice additionally thins the dressing so what began out as a thick and wealthy bitter cream dressing finally ends up as a skinny, Coleslaw-like white dressing which is refreshing somewhat than cloying.

Ingredients

  • 2 English / telegraph cucumbers (ie. long cucumbers. Sub 4 x Lebanese cucumbers, Note 1)
  • 1/2 cup sour cream (sub plain, thick yogurt)
  • 1 tbsp white vinegar (plain distilled vinegar)
  • 1 tsp white sugar
  • 1 tbsp fresh dill , finely chopped
  • 1/2 tsp salt
  • Black pepper

Instructions

  1. Peel cucumbers and finely slice into 2mm / 0.2" slices using a mandoline (or by hand and show off your knife skills!)
  2. Mix dressing ingredients in a small bowl.
  3. Toss cucumbers with dressing, then set aside for at least 4 hours or even overnight. The cucumbers will soften and leach juice which will thin the dressing to the right consistency.
  4. Serving: Toss well then transfer to bowl for serving. Serve chilled for the most refreshing flavour!

Notes

1. Cucumbers – It’s best to use the long cucumbers called English or telegraph cucumbers. These are less watery than Lebanese cucumbers, the short ones which are more common in Australia. Lebanese cucumbers will make the dressing slightly thinner than intended and the cucumber will go slightly softer. But they are still delicious and worth using with this recipe!
If you can’t find English cucumbers, use 4 x Lebanese cucumbers instead (each about 20-25cm long). If you use Lebanese cucumbers, peeling is optional (skin is tougher on Telegraph cucumbers) but feel free to do so.
2. Storage –  Keeps for 2 days. After this, I find the cucumber gets a bit too soft for my taste.
3. Nutrition – Per serving, assuming 5 servings.
