This corn dip is a creamy, spicy, and refreshing appetizer made with Mexican-style corn. It tastes best served chilled. It’s great with chips, crackers, or sliced vegetables. Exceptional with Hawaiian bread.

Ingredients

Original recipe (1X) yields 12 servings

  • 3 (11 ounce) cans Mexican-style corn

  • 10 ounces shredded Cheddar cheese

  • 1 (8 ounce) container sour cream

  • ¾ cup mayonnaise

  • 1 (4 ounce) can diced green chiles, drained

  • 5 green onions, chopped

  • 1 jalapeño pepper, chopped

Directions

  1. Gather the ingredients.

  2. Combine Mexican-style corn, Cheddar cheese, sour cream, mayonnaise, green chiles, green onions, and jalapeño in a medium bowl; mix well.

  3. Cover and refrigerate until chilled before serving, at least 1 hour.
