Carrot Ceviche (Vegan) Recipe
Carrot Ceviche (Vegan) shows that in Mexico, ceviche can be made using only vegetables – carrots, tomato, and onion marinated through authentic plant-based technique. This traditional recipe demonstrates Mexican vegetarian cooking while maintaining authentic ceviche preparation methods and flavor development. The carrot base provides satisfying texture and natural sweetness.

In Mexico, ceviche can also be made using only vegetables, in this case carrots, tomato, and onion that are marinated in a citrus sauce with ketchup and serrano peppers. Serve over tostadas, sprinkled with avocado. [Recipe originally submitted to Allrecipes.com.mx]
