Caramelized Onion and Jalapeño Quesadillas Recipe
Caramelized onion and jalapeño quesadillas work beautifully as appetizers or light meals, with the option to add meat for heartier versions if desired. These flavorful quesadillas showcase the perfect balance between sweet caramelized onions and spicy jalapeños that create complex, satisfying taste profiles. The combination provides an excellent base that can be customized while the sweet-heat balance makes these appealing to various taste preferences and perfect for entertaining.

These caramelized onion quesadillas are great for an appetizer or meal. You can add meat if you like, but I make a vegetarian option for meatless Monday! Top each quesadilla with sour cream, salsa, lettuce, and guacamole.
Ingredients
1 tablespoon butter
1 large onion, chopped
2 jalapeño peppers, chopped
2 tablespoons vegetable oil, or as needed
4 (10 inch) flour tortillas
1 cup shredded Mexican cheese blend
Directions
Melt butter in a large skillet over medium-low heat. Add onion; cook and stir until softened and lightly browned, about 10 minutes. Add jalapeño peppers; cook and stir until onion is browned, about 10 more minutes. Transfer mixture to a plate.
Heat about 1 tablespoon oil in the same skillet. Add one tortilla; top with 1/4 cup cheese, 1/2 of the onion mixture, and another 1/4 cup cheese. Top with another tortilla and cook quesadilla until browned and cheese is melted, 1 to 2 minutes per side. Remove to a plate, add more oil to the skillet, and repeat to make remaining quesadilla.
