I really posted this proper again once I first began RecipeTin Eats. Again then, I had hardly any readers and my photographs weren’t so nice. However persistence isn’t my best advantage and I used to be so enthusiastic about beginning a meals weblog that I couldn’t wait to share my favorite recipes.

Quick ahead virtually 2 years (2 years??? I’ve been doing this for two years??). My images has considerably improved. And I’m so blessed to have so many readers from throughout this large large world to share my recipes with.

I made these corn fritters on the Easter lengthy weekend and as I used to be making the “mmmm” noises as I munched by my pile of fritters, it made me unhappy to suppose that so few individuals had seen the recipe as a result of it was buried within the archives (with not-so-crash-hot-photos!).

So I made a decision to replace the put up, take recent new photographs and share this once more!

There’s a cause I’ve gone to the hassle of reshooting and reposting this recipe – as a result of they’re very particular corn fritters. These are Invoice Granger’s corn fritters, from his common bistro, arguably among the best locations for brunch in Sydney.

Invoice’s corn fritters are in contrast to another “on the market” as a result of the entire fritter actually tastes of corn, slightly than simply bursts of it everytime you chunk right into a corn kernel. That is due to the additional step (value it!) of mixing many of the corn with the batter – together with coriander (cilantro) which provides it one other flavour enhance. When you’ve got a handheld stick, you may simply do that within the mixing bowl (that is how I do it), in any other case you need to use a meals processor or blender.

PS To everybody who doesn’t like chopping corn off a cob as a result of it goes all over the place, right here’s my little tip: pop a ramekin in a big bowl, stand the corn on it and minimize the kernels off. The bowl will catch the kernels that fly off the cob and the ramekin elevates the corn so it’s straightforward to slice all the best way to the underside. 🙂

PPS No laughing at my Child Arms!

How to cut corn off the cob

Actually, these fritters are unbelievable, whether or not you utilize recent, frozen or canned corn. To be trustworthy, I usually use frozen corn – it’s simply irresistibly handy – however as with something made utilizing recent slightly than canned greens, it truly is further particular when you use corn off the cob.

The avocado salsa topping is an ideal accompaniment with these corn fritters. It’s juicy and creamy, and in addition provides a burst of freshness to this.

Whether or not for breakfast, brunch, lunch or as a starter, these fritters are subtle and tremendous straightforward to make. There’s a cause Invoice’s is well-known for these – they’re that good!

Ingredients

  • 3 cups fresh corn kernels (~ 3 large corn cobs)
  • 1 small red onion chopped
  • 2 large eggs (55 – 60g/2oz each)
  • 1/4 cup cilantro/coriander leaves and some stems (lightly packed)
  • 1/2 tsp cooking salt (kosher salt), or 1 tsp sea salt flakes
  • Freshly ground Black pepper
  • 1 cup plain flour (all-purpose flour)
  • 1 tsp baking powder
  • 3 tbsp olive oil
  • 1 large (or 2 small) ripe avocado, stone removed and diced
  • 1 1/2 tomatoes , seeded and diced (about 3/4 cup, diced)
  • 2 tbsp coriander/cilantro , roughly chopped
  • 2 tbsp lemon or lime juice
  • 2 tbsp finely chopped spring onions scallions or red onion
  • 1 dash Tabasco sauce , optional
  • 1/4 tsp cooking salt / kosher salt (1/2 tsp sea salt flakes)
  • Freshly ground Black pepper

Instructions

  1. Turn on the oven to very low – just to keep the fritters warm.
  2. Place 2 cups of the corn kernels and the onion, eggs, coriander, salt and pepper in a bowl and whizz with a stick blender until most of the corn is pureed (but still lumpy, not completely smooth). You can also do this step in a blender or food processor.
  3. Stir through remaining corn, flour and baking powder until just combined.
  4. Heat 1 tablespoon of the oil in a skillet/fry pan over a medium high heat.
  5. When the oil is hot, drop 2 heaped tablespoons of mixture per fritter into the pan and cook in batches for 1 1/2 minutes each side, or until golden.
  6. Transfer to a baking tray and keep warm in the oven while you are making the rest of the fritters.
  7. To serve, stack 3 corn fritters on each plate and top with avocado salsa and extra cilantro/coriander leaves if desired.
  8. Combine all ingredients, toss very gently.

Notes

1. Fresh corn is best but you can use defrosted frozen or well drained canned corn kernels.
2. Recipe very slightly adapted from this one by Bill Granger. The change I made was to stir through the flour after pureeing the corn because otherwise, there is a risk of over beating the flour which will make the fritters tough.
3. Nutrition per serving (3 corn fritters + avocado salsa):
