Avocado Tomatillo Salsa
This avocado salsa verde may be the perfect summer condiment. It requires no cooking, only takes 10 to 15 minutes to make, looks gorgeous, and tastes amazing with anything grilled — and even most things that aren’t. Spoon this spectacularly simple green sauce over grilled pork tacos or grilled meats, or serve it with chips.
Ingredients
6 ounces fresh tomatillos – husked, rinsed, and halved
1 large ripe avocado – halved, seeded, and flesh scooped out of the peel
¼ cup packed cilantro leaves
½ lime, juiced
1 tablespoon thinly sliced serrano chile pepper, or to taste
salt to taste
Directions
Place tomatillos into a food processor. Add avocado, cilantro, lime juice, serrano pepper, and salt. Process until smooth. Taste and adjust seasoning, then transfer to a serving bowl.
Recipe Tip
If you can’t find fresh tomatillos, you can use canned tomatillos. Wear gloves to handle the serrano pepper.
