Ingredients

Original recipe (1X) yields 4 servings

  • 1 pound uncooked medium shrimp, peeled and deveined

  • 1 (1.12 ounce) package fajita seasoning mix, divided

  • 3 tablespoons olive oil, divided

  • 1 red bell pepper, sliced into thin strips

  • 1 green bell pepper, sliced into thin strips

  • 1 red onion, sliced into thin strips

  • 4 (10 inch) flour tortillas, toasted

Directions

  1. Preheat an air fryer to 400 degrees F (200 degrees C).

  2. Place shrimp into a bowl and sprinkle 2 teaspoons fajita seasoning over top. Drizzle with 1 tablespoon oil and toss to combine.

  3. Place bell pepper and onion strips into a second bowl and sprinkle remaining seasoning over top. Drizzle with remaining 2 tablespoons oil and stir to combine.

  4. Place vegetables in the basket of the preheated air fryer and cook for 12 minutes, shaking halfway through the cook time. Transfer mixture to a large bowl.

  5. Place shrimp in the basket of the air fryer and cook for 5 minutes. Flip and cook for 3 minutes more.

  6. Divide vegetables among tortillas and top with shrimp.

Tips

You can use any color of bell peppers.
